This is Siegfried NP-C with the Loveland Medical Clinic. I decided to do a quick experiment eating more carbohydrates than I usually do to see what would happen with my state of ketosis. Not just added carbs, but processed carbohydrates. The night before I started this I had a couple fajitas with flour tortillas for dinner. For dessert, I had an ice cream sandwich and several glasses of wine. To finish the night off I ate a bag of popcorn.
Completely out of ketosis
You can see from the picture above that when I checked my ketones and glucose in the morning the numbers were not good. My fasting sugar was really(119) and my ketones were non-existent. For breakfast, I had a Cowboy Coffee. Here is a link to my recipe for my cowboy coffee which is basically 200 calories of pure fat. For lunch, I repeated the same Cowboy Coffee which added another 200 calories of pure fat. In between my cowboy coffees, I drank two water bottles. In the afternoon I had two more water bottles. One bottle had my magnesium water which you can read about that here. The other bottle had a scoop of vitamin C in it which has about 1400 mg of ascorbic acid in it.
Metabolically flexible and have ketones
I really had no idea what to expect when I checked my ketones and glucose at 4 p.m. You can see I was fully in ketosis as my ketones were 1.2 and my glucose was in the 80s. When I first started this whole low carb, moderate protein, high-fat diet it probably would have taken me a week to get back into ketosis. Now as you can see I am metabolically flexible and can very easily swap back and forth from sugar burning to fat burning. I like the keto mojo to measure my numbers.
