Light and Fluffy Keto Sandwich Bread
This keto bread is amazing. You can use it for sandwiches. I love it for burgers, even better than portobello mushrooms. Until I started using this bread I had not had a sandwich in years, now I have one weekly.
Ingredients for keto bread
- 3 eggs
- 3 ounces of cream cheese
- 1/8 tsp cream of tartar
- 1/4 tsp salt
- sprinkle of garlic powder
Directions to make keto bread
Crack the eggs and separate them. I use two different bowls. A larger bowl that I put the egg yolks into and a smaller one that I’m going to put the egg whites in. Be very careful not to get any of the yolks in with the whites. If you get any of the yolk mixed with the whites the fat from the yolk will not allow the whites to stiffen up. If the eggs are at room temperature they are a whole lot easier to work with and a whip up much faster.
Add the cream of tartar and the salt to the whites and whip them up. You want to get them nice and foamy. You know you are done when the peaks get nice and high and stay firm.
Next start blending up the three egg yolks and the cream cheese together until they’re nice and smooth.
With a rubber spatula, you will fold the whites into the yolks little by little. Just spoon some in and be careful to not to put it in too quickly. If you put too much in at once you will break the whites and it’s actually going to start to flatten out. What I mean by folding it is you just gently spoon the eggs whites into the yolk mixture and very gently mix it.
Once the egg yolks and whites are folded I spoon them out on some parchment paper that I have already put on a baking pan. I usually make six. Do not put them too close to each other because just like cookies they will stick together. I like to use a small ladle and spoon these out. I first put a ladle full of each just to make sure they’re getting equally distributed and then I’ll add more at the end to even them out.
The oven should be preheated to 300 degrees and they’ll go in for 25 minutes. I like to put a sprinkle of garlic powder on top of each piece. I find it gives it a little bit of extra kick. I do turn the pan around in the oven at about the 12-minute mark. They are ready when they are golden brown.
Let them cool for a little while and separate them out. Just pick up the edge of the parchment paper and then peel them right off.
You will love these because they are light and fluffy. It is not going to have the density of your Italian or your French loaves of bread. I have another recipe if you want that kind of texture.
