Seafood Paella
Now this is not a keto meal in terms of its macros. The carb content of this is minimal but the protein content makes up the majority of this meals macros. I had not eaten for 20 hours prior to this meal so I can guarantee you that I was in ketosis when I ate this. What I ate there has 15.7 g net carbs, 11.5 g of fat, and 33 g of protein. Everything used to cook this was organic and wild caught. Usually I boil an egg for a minute and pour it on top for this meal. Siracha adds a little spicy flavor as well. I eat this meal once every couple of weeks. Totally love it. Takes about 20 minute to cook.
Portion: 3-4 servings
Ingredients for seafood paella
- 1 tablespoon coconut oil
- 6 oz of fresh wild-caught shrimp
- 6 oz of fresh scallops
- 1 teaspoon Himalayan salt
- 4 tablespoons minced garlic, divided(I use preminced garlic from Costco)
- 1 bag of organic cauliflower rice (16 oz)(I use frozen cauli rice from Costco)
- 1⁄2 cup of frozen green peas
- 1⁄2 red bell pepper, thinly sliced lengthwise
- 2 scallions, sliced into small pieces
- 1 cup of sliced shiitake mushrooms
- 1⁄4 cup sliced black unpitted olives
- 1⁄4 tablespoon turmeric powder
- A pinch of cayenne pepper
- A handful of fresh cilantro
Steps to cook seafood paella
- Heat a large skillet over medium heat. Once hot, add coconut oil and sauté shrimp, scallops,and mushrooms with salt and garlic until lightly browned, about 4-5 mins.
- Remove from heat and immediately place in a bowl.
- In the same skillet you used to cook the seafood, sauté the cauliflower rice, red peppers, scallions, cilantro, green peas, olives, himalayan salt, turmeric, cayenne pepper, and garlic—about 10 minutes. Use a big wooden spoon to mix all the ingredients while they are cooking. Add water as necessary so the cauliflower rice doesn’t stick to the skillet if you are using fresh cauli and not the frozen version.
- Add the cooked shrimp, scallions, and mushrooms to the cauliflower rice, including the water drained from the mushrooms.
- Using a wooden spoon, mix all the ingredients well and reduce heat to low, cover and cook for 5 more minutes.
- Serve and enjoy! I like to add siracha sauce to this. I also like to drop an egg that I put in boiling water for 1 minutes on top of this. It is really good.
